  1. 6 Granny Smith apples, cored, cut in large chunks
  2. 2 (4-inch) cinnamon sticks
  3. 1 cup golden raisins
  4. 1 cup packed light brown sugar
  5. 1/2 cup apple juice
  6. 2-inch piece fresh ginger, peeled and minced
  7. 1 teaspoon lemon zest
  8. Gingersnap cookies
  1. Place all ingredients except cookies in slow cooker crock and stir to combine.
  2. Cover slow cooker and cook on HIGH for 2 to 3 hours or LOW for 4 to 5 hours.
  3. Stir and remove cinnamon sticks.
  4. Serve warm with gingersnap cookies.
