Everyone loves a great meal off the grill on Memorial Day, and this year you’ll be able to deliver a steak dinner at a surprisingly affordable cost. Flank steak is an inexpensive and lean cut of beef that benefits from an overnight marinade to help make it tender. Grill it to medium-rare or medium. Once rested, slice it at an angle against the grain.

There are dozens of great ways to marinate flank steak, and one of our favorites is this sweet and savory version with soy sauce, honey and ginger. Onions make a great partner to the steak, and we love the way they caramelize on the grill. Serve the steak with corn on the cob and you’ve got a great family meal for the inaugural summer holiday.

Grilled Marinated Flank Steak
SERVES: 8

Ingredients
1/2 cup honey
1/2 cup vegetable oil
1/3 cup low sodium soy sauce
1 teaspoon ground ginger
1 teaspoon dried red pepper flakes
1 clove garlic, minced
1 (2 pound) flank steak
1 large sweet onion, cut into 1/2-inch pieces
Instructions
Stir honey, oil, soy sauce, ginger, red pepper flakes and garlic in a medium bowl. Place flank steak and sliced onion in a large plastic zipper bag.
Pour marinade into bag; seal. Refrigerate several hours or overnight, turning bag over once.
Preheat grill to MEDIUM-HIGH heat or GRILL ZONE (ORANGE).
Drain meat and onions; discard marinade.
Grill meat and onions covered 7 to 8 minutes on each side. Meat will be medium rare (145°F) to medium (160°F) doneness. Let meat stand 5 minutes before slicing.

When we talk about grilling steaks, my first thought always goes back to my dad. He used to grill steak for us kids at least once a week, and we loved it. Make that “LOVED it.” The caps lock is essential. Sometimes, he’d serve a steak with sauteed mushrooms and onions flavored with garlic, salt and pepper. Sometimes, he’d serve a steak cooked low and slow, making a less expensive cut as tender as could be. Whatever he did with a steak, it was done well (please don’t confuse that for well done) and it created a lifelong love for one of our greatest dinner delicacies: steak.

Here is our go-to recipe for the perfect grilled steak, good for a family dinner, date night or Valentine’s Day. Just season the sirloin cuts slightly, place on a hot grill and let it rest before slicing to keep it nice and juicy. Now you can grill steak like a pro. Dig in!

Classic Grilled Steak
SERVES: 4

Ingredients
2 Tablespoons olive oil
2 boneless ribeye, New York strip or sirloin beef steaks, cut 1-inch thick (about 2 pounds total)
1 clove garlic, crushed
Salt and pepper to taste
Instructions
In a small bowl, combine olive oil and garlic. Generously rub or brush the flavored oil on both sides of the steaks. Sprinkle the steaks lightly with salt and pepper.
Preheat grill to 450°F or set on SEAR.
Place steaks on grill. Grill 8 to 16 minutes, turning halfway through or until meat thermometer registers 140°F.
Remove steaks from the grill. Cover loosely with foil and let steaks rest for 3 to 5 minutes or until it reaches 145°F. Thinly slice steak across the grain. Season with additional salt and pepper if desired before serving.
