Salted Caramel Mocha Coffee
SERVES: 1

Ingredients
3 Tablespoons ground coffee
12 ounces water
2 Tablespoons half and half
2 Tablespoons caramel ice cream topping
1 Tablespoon chocolate syrup
Whipped cream
Caramel ice cream topping
Sea salt
Instructions
Scoop coffee into Scoop filter (do not fill above MAX line).
Fill mug with water and pour into coffee maker.
Select BOLD setting. Brew coffee into mug.
Stir in half and half, caramel ice cream topping and chocolate syrup.
Top with whipped cream. Drizzle with caramel topping and sprinkle with sea salt.

We love celebrations of any kind, but we get excited when our favorite food holidays roll around. It’s a great excuse to eat things like this twist on the classic hot fudge sundae. We grill the pound cake for caramelized flavor and then top it with all the classic sundae ingredients. Try it for dessert the next time you grill or go ahead and make them tonight. After all, it’s a holiday.

Grilled Pound Cake Sundaes
SERVES: 4

Ingredients
1/4 cup butter, melted
1 teaspoon ground cinnamon
4 (3/4-inch thick) slices pound cake
4 scoops vanilla ice cream
1/2 cup hot fudge sauce
Instructions
Stir butter and cinnamon in a small bowl; brush both sides of pound cake slices evenly with mixture.
Preheat grill to MEDIUM-HIGH heat.
Grill pound cake slices 2 to 3 minutes on each side.
Top each pound cake slice with ice cream and hot fudge sauce before serving.

Crushed Cookie Frappe
SERVES: 2

Ingredients
3/4 cup water
4 Tablespoons ground espresso or other dark roast coffee
1/4 cup whole milk
2 Tablespoons sugar
1 Tablespoon chocolate syrup
2 Oreo® cookies, broken into pieces
2 1/2 cups crescent-shaped ice cubes (about 24 ice cubes)
Whipped cream
Instructions
Pour water into water reservoir. Place coffee filter in brew basket. Add ground espresso; brew coffee.
Place milk, sugar, chocolate syrup and brewed coffee in blender jar. Add ice to mixture in blender.
Press PULSE 4 or 5 times to chop ice. Then, blend on HIGH until mixture is thoroughly blended.
Add cookies to mixture in blender. PULSE until cookies are blended into mixture.
Top with whipped cream and additional cookie pieces, if desired.

I can’t wait to share a kitchen with him, but I’m pretty sure I’ll drive him crazy with my kitchen appliance collection. I swear each and every one I have is important, but we’re quickly running out of counter space. Oops.

Luckily, I just got the Hamilton Beach Big Mouth® Duo 14 Cup Food Processor with Second Bowl. This thing does double duty. It has two different size bowls, so it’s perfect for a little bit of salsa or a giant batch of tomato soup. I love the slicer for veggies, and I’ll definitely be making my own nut butter in it. Plus it’s dishwasher safe, so Alex won’t get stuck with too much to clean up. (Really though, Alex usually does the dishes. I’m a lucky lady.)

I am all about fast and easy recipes. I’m not much of a recipe-follower myself, so I usually just try “a little of this” and “a little of that” until I get it right. (Alex’s engineering background makes him a much better baker. Apparently, some things do need to be exact.)

I have a bit of a sweet tooth but I generally try to satisfy it in a healthy way. Sometimes it’s fruit, but sometimes it has to be chocolate. There is no apple in the world that could distract me from chocolate. So when a chocolate craving hit the other day, I knew there was only one thing to do. Grab an avocado and make pudding.

Say what? I swear, you will not taste the avocado in this recipe – and the healthy fats will do your body good. I can’t pretend this whole recipe is a superfood, but at least you’ve got some good stuff in there to balance out the chocolate.

These are the types of recipes I like. A handful of ingredients that you already have in your kitchen, whipped into something delicious. Chocolate just became a superfood! Shh, don’t tell anyone until they’ve tasted it. Ready? Let’s go.

Chocolate Avocado Pudding
SERVES: 1

Ingredients
1 ripe avocado
3 tbsp maple syrup
1/4 cup cocoa powder
2 tbsp chocolate chunks
sprinkle of salt
Instructions
Slice and pit the avocado and scoop the flesh into a small bowl food processor.
Begin blending the avocado until smooth.
Add in the maple syrup and cocoa powder and continue to process.
Scoop it into a small bowl and stir in the chocolate chunks
Finish by sprinkling a bit of sea salt on top.

Buttermilk Pancakes
YIELDS: 24 servings

Ingredients
2 1/4 cups buttermilk
3/4 cup milk
3 large eggs
1/3 cup melted butter
3 cups all purpose flour
3 teaspoons baking powder
1 1/2 teaspoons baking soda
1 teaspoon vanilla extract
3/4 teaspoon salt
Instructions
Heat griddle to 350F or a nonstick skillet or pan over medium /medium high heat on the stovetop.
Add buttermilk, milk, eggs, and butter first to blender, then add remaining ingredients.
Blend approximately 30-40 seconds on high speed or until smooth. Some air bubbles will begin to form in the batter.
Pour batter into heated griddle,skillet or pan using about 1/4 to 1/3 cup batter per pancake. When bubbles can be seen evenly across the pancake, flip to the other side.
Notes
Add mix-ins such as fresh berries, chocolate chunks, nuts, chocolate hazelnut spread, peanut butter chips and/or dried fruit for fun varieties of pancakes.
