Fresh English peas are plentiful in farmers markets and grocery stores this time of year, so use them in this recipe if you can. In the fall and winter – or if you can’t find fresh ones – use frozen peas thawed to room temperature.

Spring Pea Soup with Lemon and Mint
SERVES: 6

Ingredients
2 tablespoons butter
1 small onion, chopped
1 small shallot, chopped
2 cups fresh (or frozen) spring peas
1 can (15.5 oz.) vegetable broth
1/4 cup packed fresh mint leaves
3 tablespoons half and half
2 tablespoons lemon juice
1 teaspoon salt
1/2 teaspoon black pepper
Plain Greek yogurt
Instructions
In a small saucepan over medium-high, melt the butter. Add the onions and shallots. Cook until onions are clear, about 4 minutes.
Spoon onion mixture into a blender jar. Add peas, broth, mint, half and half, lemon juice, salt and pepper. Blend on PUREE for 2 minutes or desired consistency.
Refrigerate until ready to serve.
Swirl in yogurt before serving. Garnish with lemon zest and mint sprigs (optional).
Notes
To further improve the smooth consistency of the soup, press it through a fine mesh strainer or food mill after blending.

I have to admit, I’m the kind of girl who likes to roll out of bed and make a pot of dark coffee to wash down that plate of crispy bacon and eggs-over-easy. For better or worse, I’m a foodie that celebrates pork, fat, and carbs. But this year, I turned thirty, and the cholesterol-packed lifestyle is starting to catch up with me. In an attempt to improve the health of my arteries and spice up my morning routine, I joined the ranks of those who throw healthy things into a blender for a delicious breakfast.

That’s when I looked to my Korean heritage for some inspiration and came up with a sweet potato smoothie I love. When I visited Korea a few years back, I was surprised to see sweet potatoes as the star in cakes, ice cream, and oh-so-yummy lattes. It soon became my personal goal to find the best sweet potato latte in all of Seoul. I thought if sweet potatoes could be incorporated into my morning Joe, why not try them in a smoothie?

The result was everything I was looking for: a silky smoothie with a creamy texture but still bright with the addition of mango and orange juice. And unlike other smoothies, it fills me up until lunch. It also feels good to know it’s packed with beta-carotene, calcium, potassium, and vitamins A and C. But most importantly, it’s a breakfast I look forward to when I wake up each morning!

Fruity Sweet Potato Smoothie
SERVES: 1

Ingredients
½ cup cooked, cooled, chopped sweet potato
½ banana
¼ frozen mango
½ cup orange juice
4-5 cubes of ice
1 teaspoon brown sugar
Instructions
Put all ingredients into a blender. Blend until smooth and enjoy!

Banana Peach Green Smoothie
SERVES: 1

Ingredients
¾ cup plain Greek yogurt
¾ cup fresh spinach
⅓ cup green grapes
½ avocado
¾ cup peaches
½ banana
1 Tablespoon maple syrup
½ teaspoon vanilla
Instructions
Combine all the ingredients in a Hamilton Beach Personal Blender and pulse until smooth. Enjoy!
