Center Stage: Banana Peanut Butter Waffles from If You Give a Blonde a Kitchen

Peanut butter and bananasone of my all time favorite flavor combos. Lunch time, snack time, anytime, I love these two foods together – but especially at breakfast time. Today I’m serving up the flavor combo in waffle form.

There a few reasons why I’m a fan of the banana and peanut butter duo. One, you can enjoy it any time of day. Two, it’s secretly healthy (good fats, potassium, fiber, protein, etc.). Three, rumor has it that Elvis was the founder of the legendary combo.

The King of Rock’s go-to sandwich was peanut butter and banana (sometimes with bacon). Elvis knew what he was doing, which is why there is no doubt in my mind that he would be a fan of these waffles.

The banana peanut butter waffles are packed with flavor. I got the perfect ratio of banana to peanut butter in the recipe. Neither overpowers the other and both make their presence well known.

The waffles are so easy to make that you could do it before sipping your first cup of coffee.  Simply whisk together the dry ingredients in one bowl, the wet ingredients in another bowl, and combine the two together!

Pour about a cup of batter into a Hamilton Beach Belgian Waffle Maker (I like using a ladle for easy measuring). In about five minutesjust enough time to make your coffeea fresh waffle will be ready for breakfast!

These banana peanut butter waffles came out perfectly crisp on the outside and nice and fluffy on the inside. A few bits of mashed banana peeked through in places for an extra kick of flavor.

When I serve breakfast (or anything for that matter) I enjoy making it look over the top. I spread peanut butter and sliced bananas on each waffle, stacked one on top of the other and topped it with a generous pour of maple syrup. Now who could resist a breakfast like that?

Banana Peanut Butter Waffles

Yield: 8 waffles

Ingredients

  • 1 3/4 cups all-purpose flour
  • 2 tablespoons brown sugar
  • 1 tablespoon baking powder
  • 1/4 teaspoon salt
  • 1 cup mashed ripe bananas (about 2 medium)
  • 3/4 cup creamy peanut butter
  • 2 large eggs
  • 1/2 cup canola oil
  • 1 3/4 cups low-fat milk
  • Additional peanut butter, bananas and maple syrup for garnish if desired

Instructions

  1. In a large bowl, whisk flour, brown sugar, baking powder and salt. Set aside.
  2. In a separate large bowl, whisk together mashed bananas, peanut butter, eggs, oil and milk. Add to dry ingredients and stir just until moistened (a few clumpy pieces of banana or peanut butter may be in the batter, that’s okay!)
  3. Preheat Hamilton Beach Belgian Waffle Maker according to instructions and set on medium heat. Raise cover and pour about 1 cup of batter into center of the griddle, allowing batter to spread for even filling. Lower the lid and turn handle clockwise to flip waffle maker and lock into place within 10 seconds of closing cover. Waffles are done when golden brown, about 5 to 6 minutes.
  4. Carefully transfer cooked waffle to a plate and garnish with peanut butter, banana slices and maple syrup. Serve immediately and enjoy!

  1. I tripled this recipe, subbed half the flour for almond flour, added vanilla extract and than needed to add another cup of all-purpose flour.
    I have a Krups Belgium Waffle Maker and dropped 2 cups of batter.
    Husband gave a thumbs up and said the littles should enjoy it next week.

  2. This recipe was stolen from tasteofhome.com, she simply changed regular sugar to brown sugar.

    Although the recipe seems good, it’s not cool to take credit for other people’s work. Especially when their recipe dates back YEARS before this one.
