With an electric mixer, beat butter, sugar, and brown sugar for about 2 minutes until blended. Beat in eggs, vanilla and our secret ingredient – super strong coffee. Gradually add flour, cocoa, salt, and baking powder and beat for about a minute. Stir in chocolate chips and pour the batter into a 13X9 baking pan.

The Test Kitchen prepared triple strength coffee to add to these fudgey brownies and we’re so glad they did. The coffee doesn’t add an obvious coffee flavor, but rather enhances the chocolate flavor and adds richness that is truly unmatched. If you haven’t tried adding coffee to your chocolate confections you have to give it a whirl.

Bake the brownies at 350 degree for 25-28 minutes. Once the brownies are cooked and cooled completely, cut and enjoy.

Ingredients

  • 1 cup butter, softened
  • 1 1/3 cups granulated sugar
  • 1/3 cup packed light brown sugar
  • 2 large eggs
  • ¼ cup prepared triple strength coffee
  • 1 teaspoon vanilla extract
  • 1 1/4 cups all-purpose flour
  • 2/3 cups baking cocoa
  • 1 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1 cup mini chocolate chips

Instructions

  1. Heat oven to 350°F. Spray a 13x9-inch baking dish with nonstick cooking spray.
  2. With an electric mixer on medium-high, beat butter, granulated sugar and brown sugar until blended, about 2 minutes.
  3. Beat in eggs, coffee and vanilla until blended, about 1 minute. Gradually add flour, cocoa, salt and baking powder until blended, about 1 minute.
  4. Stir in mini chocolate chips. Spread into baking pan.
  5. Bake 25 to 28 minutes or until toothpick in center comes out clean. Cool completely and cut into squares.
