When most Americans think of Belgium, we think of waffles, chocolate, or beer. I decided to use all three in a single recipe: Belgian beer waffles with Belgian chocolate! Eating these waffles is like taking a virtual vacation (you’ll have to imagine the castles, churches, and waterways).
While I created my extreme Belgian waffle recipe almost in jest as an homage to the culinary reputation of Belgium, this recipe has become a new go-to waffle recipe in our home – it’s one of the best I’ve ever made.
I suggest these Belgian waffles to any beer enthusiast. The beer gives the waffles a yeasty, slightly bitter flavor which is balanced by the melted chocolate nestled throughout the waffles. If you like your waffles sweet, top with warm maple syrup. They would also be fabulous with whipped cream and extra Belgian chocolate drizzled on top. Try switching up the beer variety each time you make the recipe until you find the one that best suits you.
I used the Hamilton Beach Belgian Waffle Maker to make these waffles and my husband, who does all the cleaning in our household, thanked me profusely. He had always complained about how hard it was to clean our old waffle iron. The Hamilton Beach Belgian Waffle Maker has removable waffle grids that are dishwasher safe! This feature alone sold me on the waffle iron. But, of course, the waffle maker also cooks up perfect waffles every time – crispy on the outside and soft on the inside.

- 2 cups all-purpose flour
- 1 teaspoon salt
- 4 teaspoons baking powder
- 1 teaspoon baking soda
- ¼ cup sugar
- 2 teaspoons cinnamon
- 4 large eggs, separated
- 6 tablespoons unsalted butter, melted
- ½ cup buttermilk
- 2 (11.2 ounce) bottles Belgian beer
- 4 cups chopped Belgian chocolate chips (or any chocolate chips you like)
- Preheat Hamilton Beach Belgian Waffle Maker to medium heat.
- In a large bowl, whisk together flour, salt, baking powder, baking soda, sugar, and cinnamon.
- In another large bowl, whisk together egg yolks, melted butter, buttermilk, and beer.
- Stir flour mixture into egg yolk mixture until just combined.
- Whisk egg whites until stiff peaks form. Gently fold into batter until just combined.
- Fold in chocolate chips.
- Cook waffles according to the waffle maker’s instructions.
- Serve immediately or keep warm in a 200 F oven.
